Excellent! I dig it.
How do you come across fish of a suitable grade? Tuna, especially, is hard to find in these parts. Well, you can find tuna everywhere, but most of what I see doesn't appear fit for sushi...
White shores, and beyond, a far green country under a swift sunrise....

It certainly helps having Japanese markets and fresh fish businesses very close by. And if you're not sure, you can always cook whatever you have before making a roll. Or, just do some non-traditional ingredients, like ham and cream cheese, smoked salmon (like you get at the grocery sore), cooked bacon, or imitation crab sticks. It's great!

I live in Boulder, so forgive me ...
Whole Foods here has sushi grade salmon, tuna and eel. I'm not a dedicated WF shopper, but good seafood is hard to find 1,000 miles from the ocean. Especially if you plan to eat it raw! $30/lb or so. Not awful compared to restaurant prices.

Way to go, Michael. Just waiting for a hybrid of your hobbies. Smoldering sushi... Raw tobacco... Maduro roll... I did see a food network chef adding small amounts of tobacco to food! How about that? Pairings galore. Some pipe tobacco smells good enough to eat.

Your prices are similar to mine, Steve. Depending on the specie, sashimi-grade tuna is $28 - $36 per pound, while salmon is around $18.00/lb. But that much gets you a LOT of sushi, so you're still way ahead compared to a restaurant.
Maduro roll... that has potential! Maybe I'll try to make a salmon figured roll this weekend when I get ready for a dinner with friends. Thanks for inspiration!
