Indeed. This is my first run at a more traditional Spanish paella. The Dominican dish that evolved from it is called Locrio. It's very similar, with the main differences being its all cooked together throughout most of the entire process, and it usually contains only chicken, goat, OR smoked fish. I used chorizo, chicken, AND shrimp today. It turned out purty good. I think I'll either cut back the chorizo or use a different sausage next time, though. It tends to give me heartburn just being in the same room.jledou wrote:Paella?

Tell me that small can labeled "piment" is saffron. Oh, please tell me it's somethign else. That would be about $100 in the states if it is.

Saffron was included in the recipe but not pictured. Pimenton = paprika.

We're not able to travel during Spring Break this week, but we're eating well. Began with some amazing mojo pork Saturday, some empanadas (baked, not fried) last night, and Brazilian Coconut Shrimp tonight. It's our "can't travel, but can eat well" staycation...
A. K. A. Steve Raichlen week. Everything on the menu (except the empanadas) this week is coming right out of his repertoire. Craig and I talked a bit about him at the end of the show last Friday, so I ran with it for this week's menu. Dude's friggin amazing.
