Mike, the "coring" thing is demonstrated in "Jiro Dreams of Sushi". Weren't you the guy who recommended that to me some years back? The connective tissue, fat content and color are all judged by the cores, ultimately leading to a quality determination.

I've also seen stingray wings "punched" (little circles cut out of them) to make faked scallops.
