Making a Puerco Asado (Cuban roast pork) today for the first time. Looks and smells great, we'll see how it tastes.

That does! I think I posted up my family's Noche Buena pork recipe. Generally garlic, oregano, bitter orange (lemon & orange work), Cumin & ground corriander. Comes out like a charm.

Sometimes, ya just wanna have a grilled burger - plus tomato, roasted peppers and onions, and spicy (homemade) hummus. Durn, that's yum!

Grilled salmon with a brown sugar/honey/soy sauce glaze, plus grilled asparagus with a balsamic vinegar/lemon juice dressing. Boom.

Lunch, Bb American (mostly) style. Grilled burgers, onions, and peppers, with roma tomatoes and jalapenos, plus a pico/salsa verde side. Nap inducing!

Stew's got me in the bbqin' mood. Ribs, lightly smoked. I like mines heavily smoked, but the guests do not.

Maybe it's like becoming one with the cigar. You lose yourself in it; everything fades away: your worries, your problems, your thoughts. They fade into the smoke, and the cigar and you are at peace. - Raul Julia

A rooftop?! I wish.

It's in the backyard, good sir. Bothers the neighbors a whole lot, but grilling has to be done the correct way. Image

When I return to Santiago, I will have a smoker! It's taken a year, but just before leaving I figured out a way to cobble various bits and pieces of other grills to make a proper smoker. Pulled pork and bacon explosions will be included in all future visits....
